Press Z. Left click to zoom in; Alt+left click zooms out.
The mouse wheel also changes canvas zoom, including while another tool is selected.
Ctrl+0 fits the canvas; Ctrl+1 displays 100%. The status bar zoom field accepts 10% to 800%. Use H or the middle mouse button to pan to another area.
